Ingredients

Main ingredients

  • 2 cups Heavy cream This is the base and gives that dreamy texture.
  • 2/3 cup Granulated sugar You'll use a bit extra for the brûlée topping.
  • 1/3 cup Fresh lemon juice Plus the zest of 1 lemon for fragrance.
  • 1/2 teaspoon Vanilla Optional but lovely.
  • 1 pinch Salt A tiny pinch rounds the flavors.

Instructions

Preparation

  • Add heavy cream, sugar, lemon zest, and a tiny pinch of salt to a medium saucepan. Bring to a gentle simmer over medium heat, stirring occasionally.
  • Once it reaches a light simmer, keep it there for about 3 minutes.
  • Remove from heat. Stir in lemon juice and vanilla. The mixture will thicken slightly.
  • Let it rest for 5 minutes, then strain into a measuring jug to catch the zest. Pour into small ramekins or glasses.
  • Cool to room temperature for 20 minutes, then chill uncovered for 30 minutes. Cover and chill at least 3 hours, ideally 6 or overnight.

Brûlée Top

  • Sprinkle a thin, even layer of sugar over the chilled possets. Torch until deep golden, or broil briefly with the cups on a cold sheet pan.
  • Rest for 3 to 5 minutes so the shell hardens.

Notes

Keep that simmer gentle to prevent splitting. Use shallow dishes for faster setting. Brûlée just before serving for best results.
