Ingredients

For the sandwich

  • 2 slices sourdough or sturdy sandwich bread Choose a sturdy bread that holds up during cooking.
  • 2 ounces low-moisture mozzarella cheese Freshly grated or sliced thinly for quick melting.
  • 2 slices provolone cheese For the best flavor.
  • 1 tablespoon Parmesan cheese Finely grated for a salty, nutty edge.
  • 1 tablespoon basil pesto Spread thinly to avoid soggy bread.
  • 1 teaspoon butter or mayonnaise For the outside of the bread.

Optional extras

  • 1 slice tomato For added freshness.
  • a few leaves spinach To enhance nutrition and color.

Instructions

Preparation

  • Warm a nonstick or cast-iron skillet over medium-low heat.
  • Spread a thin, even layer of pesto on the inside of both slices of bread.
  • Layer your cheese generously: start with provolone, add mozzarella, and sprinkle with Parmesan.
  • Close the sandwich and spread a thin layer of butter or mayonnaise on the outside of each slice.

Cooking

  • Cook the sandwich in the skillet for about 3 to 4 minutes per side, pressing gently with a spatula.
  • If the bread browns too fast, lower the heat.
  • Cover the pan for 30 to 45 seconds near the end to allow steam to help melt the cheese.
  • Let the sandwich rest for 1 minute before cutting.

Notes

Pair it with tomato soup or a crunchy salad for a complete meal. For a twist, sprinkle red pepper flakes into the pesto for some heat.
